Pumpkin is a very healthy vegetable, rich in vitamins C and E, B vitamins and folic acid. It is abundant in beta-carotene or provitamin A. These give it its orange coloration and it is a type of flavonoid considered to have anticancer properties. Contains 92 percent water, high in vegetable fiber and provides very few calories, only 25 or 30 per 100 grams of the product, ideal for maintaining a healthy weight.
